4 TBSP. MARASCHINO CHERRIES (CHOPPED)
3 TBSP. LEMON JUICE
1/4 TSP. SALT
1/2 CUP NUTS, SHOPPED
1 SM. CAN CRUSHED PINEAPPLE, DRAINED
2 CUPS SOUR CREAM
3/4 CUP SUGER
COMBINE; FILL MUFFIN CUPS THAT IN A MUFFIN TIN AND FREEZE.  REMOVE FROM TIN AND PLACE IN PLASTIC BAGS UNTIL READY TO USE.

BBQ CHICKEN CROCK STYLE
1 FRYER CHICKEN, OR 4 TO 6 BREASTS
1/2 CUP TOMATO PASTE
1/4 CUP VINEGAR
1 TBSP BROWN SUGAR
SALT AND PEPPER TO TASTE
PLACE CHICKEN IN SLOW COOKER.  MIX AND POUR ALL OTHER INGREDIENTS OVER CHICKEN.  COOK OVER LOW FOR AT LEAST 8 HRS.  SERVE OVER RICE OR PASTA OR AS SANDWICHES.

WACKY CAKE
DO NOT GREASE PAN-MIX CAKE IN CAKE PAN (8" X 8")
SIFT 1 CUP WHITE SUGAR AND 1 1/2 CUP CAKE FLOUR,
3 TBLS COCOA, 1 TSP SODA, 1 TSP BAKING POWDER,  AND 1/4 TSP SALT.  MIX WELL.
MAKE THREE HOLES IN DRY MIXTURE IN PAN.  INTO ONE YO PUT 1 TSP VANILLA, INTO ANOTHER 1 TSP VINEGAR, INTO THE OTHER 5 TBLSCOOKING OIL. POUR 1 CUP LUKEWARM WATER OVER THE WHOLE THING AND STIR THOROUGLY.
BAKE 35 MINUTES OR MORE IN MODERATE OVEN (350)
(325 if the pan is glass)
PEPPERMINT ICING (THIS IS OPTIONAL...YOU CAN USE WHATEVER YOU LIKE TO ICE IT.)
3 CUPS ICING SUGAR
1/4 CUP BUTTER
1/4 TSP PEPPERMINT EXTRACT
ENOUGH MILk TO MAKE A NICE ICING.....ADD A LITTLE AT A TIME.
CORN SALAD
(This is wonderful and quick)
2 cans of whole kernel corn
1 green bell pepper (chopped fine)
1 red bell pepper (chopped fine)
1 medium onion (chopped fine)
mild cheddar or colby cheese (shredded fine)
Mix the above ingredients and, salt and pepper to taste add Miracle Whip or Mayonaise to taste.  Refrigerate until time to serve

IGADO....a quick summer meal
1 lb boneless pork
1/2 onion - medium sliced
1/2 red pepper - medium thin sliced
3/4 cup soy sauce
1/2 cup vinegar
3 tbls oil
garlic to taste
1/2 cup green peas
salt and pepper to taste

mix pork (cut into small pieces) with soy sauce, vinegar, salt and pepper.  Marinate for 3 - 5 minutes.  Heat oil in frying pan, saute garlic and onions; add marinated pork and cook till tender (15-20 minutes)  Add additional soy sauce, salt and pepper to taste, stirring occasionally.  Add green peas and red peppers until cooked.  Serves 5-6.
